Absinthe Drip Cocktail

    I'm headed out to work an event in New Orleans the next few days and going to try to drop by the Old Absinthe House on Bourbon!     FYI-Absinthe is sold in most US liquor stores because the export version made for the US doesn't contain wormwood. By filtering out the chemical thujone (from the wormwood herb), it can be legally sold in the US. Read more HERE.

    HOW-TO
    1 oz. absinthe
    Ice water
    Sugar cube
    Tools: absinthe spoon; small carafe or pitcher of ice water.
    Glass: an absinthe glass is preferred; a wine glass or water goblet will also work.

    The French Method (Authentic Version-Without Fire)
    Place a sugar cube on top of a specially designed slotted spoon.  Place spoon on the glass which has been filled with a shot of absinthe. Ice-cold water is then poured or dripped over the sugar cube so that the water is slowly and evenly displaced into the absinthe, typically 1 part absinthe and 3 to 5 parts water.

    The Bohemian Method (With Fire)
    Place sugar cube on a slotted spoon over a glass containing one shot of absinthe. The sugar is pre-soaked in alcohol, usually more absinthe, and then set ablaze. The flaming sugar cube is then dropped into the glass igniting the absinthe. Finally, a shot glass full of water is added to douse the flames.
