We've been given about 20 lbs of tomatoes, and what better way to put them to use than to can some salsa! I've always wanted to try this, so I am going to break down and buy a home canning kit and some mason jars tonight and follow the directions on USDA/UGa's requirements on canning salsa! UPDATE: I did it! I canned some salsa! I just used a regular pot and washed the cans and lids in the washing machine, then boiled them before filling, filled and then boiled the closed cans for 15 min. Note to self-wear gloves while chopping peppers and also when working with steam!
