Poppy Seed Chicken

I made an old sorority house comfort food favorite last night, Poppy Seed Chicken! It was delicious and very easy. Served with green beans with butter and Slap Yo Mama Seasoning, plus some Pillsbury croissant rolls, it was perfect for a lazy night in! Happy Tuesday! xoxo, Julie

Prep: 10 min., Bake: 40 min.

Ingredients
3 cups chopped cooked chicken
1 (10 3/4-oz.) can cream of chicken soup, undiluted
1 (16-oz.) container sour cream
3 teaspoons poppy seeds
31 round buttery crackers, crushed
1/4 cup butter, melted

Preparation
1. Combine first 4 ingredients. Spoon mixture into lightly greased 11- x 7-inch baking dish.
2. Stir together cracker crumbs and melted butter; sprinkle evenly over casserole.
3. Bake at 350° for 35 to 40 minutes or until hot and bubbly.

San Diego was so relaxing. I highly suggest a trip there if you have a three-day weekend. The weather was beautiful, sunny and breezy. The coast of the Pacific Ocean is breathtaking. I was blown away by the beauty of La Jolla (pronounced La Hoya), an area just north of San Diego. I'm staying in La Jolla on my next visit. The things that mesmerized me about La Jolla:

#1) The views of the Pacific Ocean-Some of the most beautiful I've ever seen.

#2) Seal Beach aka Children's Beach-Children's Beach, affectionately known as "Casa Beach" by the locals, is a small cove beach created years ago for the children of La Jolla and visitors to experience the beach in an enclosed section within the La Jolla cliffs. What became a safe-haven for children also became a natural attraction to seals and seal lions that frollick in La Jolla Bay. Seals and seal lions come here to rest, sunbathe and even have pups. It's a sight you will never forget.

#3) Monterey Cypress Tress in Ellen Browing Scripts Park-La Jolla was home to Dr. Seuss. It is here where he got his inspiration for the trees in his books.

#4) La Valencia Hotel aka The Pink Lady of La Jolla-Just steps from the coastline, the 86 year-old's beachfront hotel’s Mediterranean influenced architecture and décor, including beautiful courtyards, hand painted murals and exquisite Spanish mosaics, evoke old-world charm.

#5) Baja Fresh-Ok, so this wasn't in La Jolla but in the Gaslamp District of San Diego. No trip to Cali is complete without a trip to this place! Mahi Mahi Tacos...yummmm!

Dr. Joey Schulman's 7-Day Cleanse

I've been working with great effort this week to clean out clutter in my life and make way for a peaceful and productive 2012. One goal is to start Dr. Joey Schulman's 7 day cleanse. The basics to this easy cleanse are below. Combined with Sunday's Louisiana Inaugural Marathon that I'm running (I'm running the half), I am already feeling re-freshed and re-energized. Have you ever done a cleanse? Happy Thursday, Julie

Do not confuse a cleanse with fasting. During a cleansing period, you will still be eating nutrient dense, calorie light foods and can continue to exercise.
To start a cleansing and feel your very best, simply follow the 7 steps below for 7-10 days.

Drink a minimum of 2 liters of water per day. Twice per day squeeze half a lemon into warm water and drink. Herbal tea consumptions counts as water.
Drop all grain with the exception of a ¼ cup of bran per day to avoid constipation. Load up on vegetables, proteins, fruits and essential fats.
Keep hard-boiled eggs and baby carrots in your fridge. These options are perfect for when hunger and cravings hit.
Eat a minimum of 3 ounces of protein per meal (chicken, fish, egg, turkey, tuna, soy). To eyeball, 3 ounces of protein = the palm of your hand without a finger or thumbs.
Eat fresh and live green food as often as you can such as spinach, broccoli, kale, rapini and swiss chard.
Eat “good fats” to fill up and burn fat. Options include almonds, walnuts, olive oil, sesame oil, ground flaxseeds or chia seeds and avocados. It is also advisable to supplement with a high quality, distilled fish oil. Avoid all trans fatty acids and saturated fats.
Eat minimal dairy products. If you do eat dairy, opt for Greek yogurt (1/2 cup), cottage cheese or goat’s cheese.

The top 3 cleansing supplements I recommend are:

A probiotics – the “friendly” bacteria that will ensure immunity is high and digestive health is at its maximum
A green powder such as greens+ and/or chlorophyll – to ensure your system tends towards an alkaline state (vs. acidic….more on this in a later blog!)
A high quality multi-vitamin – to act as a nutritional safety net (especially during the winter

Cajun Black-Eyed Peas

Eating black-eyed peas on New Year's Day is thought to bring prosperity. The traditional meal also features collard, turnip, or mustard greens and ham. The peas, since they swell when cooked, symbolize prosperity; the greens symbolize money; the pork, because pigs root forward when foraging, represents positive motion. Cornbread also often accompanies this meal. Below is the recipe my boyfriend is making right now for tomorrow! Thanks Chef John Folse for the recipe! Happy New Year's Eve! Chef John Folse's Cajun Black-Eyed Peas



	INGREDIENTS: 1 pound dried black-eyed peas 1 pound heavy smoked pork sausage 1/2 pound smoked ham, cubed 1/2 cup shortening or bacon drippings 1 cup onions, chopped 1 cup celery, chopped 1 cup bell pepper, chopped 1/4 cup garlic, diced 1 tsp dry basil 1 bay leaf 1 cup green onions, sliced 1/2 cup parsley, chopped salt and cracked black pepper to taste METHOD: It is always best to presoak any hard-shell bean in cold water overnight before cooking. This will cut the cooking time by 1/3. Drain peas from soaking water and rinse in cold tap water. In a 1-gallon stock pot, melt shortening or bacon drippings over medium-high heat. Add onions, celery, bell pepper, garlic, basil, ham and smoked sausage. Sauté approximately 10 to 15 minutes, or until vegetables are wilted. Add bay leaf and peas. Add enough cold water to cover peas by 2 inches and bring to a low boil. Cook for 30 minutes, stirring occasionally. Reduce heat to simmer and continue cooking approximately 45 minutes or until tender. Stir from time to time, as peas will settle to the bottom of the pot and tend to stick. Once tender mash about 1/3 of the peas on the side of the pot using a metal cooking spoon. This will give the peas a creamy texture. Season to taste using salt and cracked black pepper. Add green onions and parsley and continue cooking until peas are tender and creamy. Serves 6.

On Christmas Eve, bonfires are lit for miles up and down the Mississippi River levees in St. James Parish to light the way for Papa Noel. With the addition of gorgeous fireworks, this is an incredible sight, and my family has made it a tradition to go see these fires every December 24th in Lutcher, La. How to Make the Pom-Poms

You'll need tissue paper and 24-gauge white cloth-covered floral wire.

Hanging Pom-Poms
1. Stack eight 20-by-30-inch sheets of tissue. Make 1 1/2-inchwide accordion folds, creasing with each fold.
2. Fold an 18-inch piece of floral wire in half, and slip over center of folded tissue; twist. With scissors, trim ends of tissue into rounded or pointy shapes.
3. Separate layers, pulling away from center one at a time.
4. Tie a length of monofilament to floral wire for hanging

Ashley's Reindeer Cake Pop Recipe

1 box cake mix (cook as directed on box for 13 X 9 cake)- For these I used Red Velvet
1 can frosting (16 oz.)-for these I used Cream Cheese
Wax paper
Chocolate candy melts (1 lb. pkg.)
Antlers- Mini pretzels broken in half
Nose- Red M&M's
Lollipop sticks
Writing icing

**Note: You can use any combo of cake mix/frosting! The cake pop recipes from Bakerella say to use Candy Melts instead of Almond Bark, but I always use Almond Bark. As far as my research goes, you can use the two interchangeably. She also says to use edible ink pens for drawing on the eyes and smiles, but the ones I bought are super soft and bend when you use them, so I used the icing instead. It hardens up after about 10 minutes :)**

After cake is cooked and cooled completely, crumble into large bowl.
Mix thoroughly with 1 can frosting. (Some people use the back of a large spoon, but I find it easier to use fingers to mix together. But, be warned, it will get messy. Also, you may not need the entire can of frosting, so start out by using almost the entire can and add more if you need to.)
Roll mixture into quarter size balls and place on wax paper covered cookie sheet. (Should make 45-50)
Melt Almond Bark using directions on back of package- I do over the stove on LOW temp.
Dip the tip of your lollipop stick in a little of the melted candy coating and insert into the cake balls. (Insert a little less than halfway.)
Place them in the fridge for 40 mins (or overnight) to firm up.
Once firm, carefully insert the cake ball into the candy coating by holding the lollipop stick and rotating until covered. Once covered remove and softly tap and rotate until the excess chocolate falls off. Don’t tap too hard or the cake ball will fall off, too.
Quickly stick the "antlers" in and the "red nose" on while the Almond Bark is still wet.
Place in a styrofoam block to dry.
Once dry, draw faces with Writing Icing and allow to dry for 10 minutes.
Package as you wish and enjoy!

Welcome the newest addition to the mantle...the Menorah! Thank you Target for this fabulous $20 find, complete with skinny candlesticks! Although I'm not Jewish, I love to recognize and pay respect to special religious traditions! The Menorah is a nine-branched candelabrum lit each evening during the eight-day holiday of Hanukkah. The ninth holder, called the shamash is for a candle used to light all other candles and typically placed higher and in the center of the others. Hanukkah this year is from December 20-28th, so the first candle will be lit on the 20th! Bring on 8 crazy nights! Happy Tuesday! xoxo, Julie

10 Thanksgiving Desserts!

#1 Grandma Opal's Apple Pie

Ingredients

1 recipe pastry for a 9 inch double crust pie

1/2 cup unsalted butter
3 tablespoons all-purpose flour
1/4 cup water
1/2 cup white sugar
1/2 cup packed brown sugar
8 Granny Smith apples - peeled, cored and sliced

Directions
1.Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.

2.Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.

3.Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.

#2 Spiced Pumpkin Fudge

Ingredients
2 cups granulated sugar
1 cup packed light brown sugar
3/4 cup (1 1/2 sticks) butter or margarine
2/3 cup (5 fl.-oz. can) canned evaporated milk
1/2 cup canned pure pumpkin
2 teaspoons pumpkin pie spice
2 cups (12-oz. pkg.) white chocolate chips or Wilton's orange candy melts
1 jar (7 oz.) marshmallow crème
1 cup chopped pecans
1 1/2 teaspoons vanilla extract

LINE 13 x 9-inch baking pan with foil.

COMBINE sugar, brown sugar, evaporated milk, pumpkin, butter and spice in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 10 to 12 minutes or until candy thermometer reaches 234° to 240º F (soft-ball stage).

QUICKLY STIR in morsels, marshmallow crème, nuts and vanilla extract. Stir vigoriously for 1 minute or until morsels are melted. Immediately pour into prepared pan. Let stand on wire rack for 2 hours or until completely cooled. Refrigerate tightly covered. To cut, lift from pan; remove foil. Cut into 1-inch pieces. Makes about 3 pounds.

#3 Easy Blueberry Cobbler

Ingredients

1 -20 oz. can crushed pineapple

1/2 C brown sugar

1 1/2 t ground cinnamon

1 can blueberry pie filling

1 box white or yellow cake mix

1 C butter, melted (told you it was going to be good)

Directions

1. Pour pineapple (and juice from the can) into a sprayed 9x13 pan.

2. Sprinkle the brown sugar and cinnamon over the top of the pineapple.

3. Pour the blueberry pie filling over the top of the seasoned pineapple.

4. Sprinkle the dry cake mix over the top of the blueberry pie filling and pour the melted butter over it.

5. Bake uncovered at 350 degrees for 45 minutes, or until bubbly and golden brown

#4 Mini Pumpkin Cake

Ingredients

3/4 cup butter, softened

1 (8-oz.) package cream cheese, softened
2 cups sugar
2 large eggs
1 1/2 cups canned pumpkin
1/2 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon pumpkin pie spice
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Caramel-Rum Glaze* Or Vanilla Glaze Caramel Stems, Leaves, and Vines (optional, instructions below)

Preparation
1. Preheat oven to 350°. Beat butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating until light and fluffy. Add eggs, 1 at a time, beating just until blended after each addition. Stir in pumpkin and vanilla.

2. Combine flour and next 4 ingredients; gradually add to butter mixture, beating at low speed just until blended. Spoon batter into 2 lightly greased pumpkin-shaped muffin pans, filling three-fourths full.

3. Bake at 350° for 24 to 26 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 5 minutes. Remove from pans to wire racks, and cool completely (about 30 minutes).

4. Cut rounded tops off muffins to make them flat. Invert top muffins onto bottom muffins, forming pumpkins. Drizzle Caramel-Rum Glaze over pumpkins. Decorate with Caramel Stems, Leaves, and Vines, if desired.

*Vanilla Glaze may be substituted.

CARAMEL STEM: Press 1 caramel between fingers, lengthening to 1 1/2 to 2 inches to form a stem. Curl stem gently.

CARAMEL LEAVES: Roll caramels into 2-inch squares on a flat surface, using a rolling pin. Cut into leaves, using a paring knife. Gently press tips of leaves to flatten, if desired. Score leaves, using a paring knife. Pinch bottoms of leaves together.

CARAMEL VINES: Cut 1 caramel into 3 equal pieces. Squeeze each piece gently to flatten, and roll between hands or on a flat surface into a long thin rope. Twist ends to curl.

Note: We tested with Wilton Dimensions Multi-Cavity Mini Pumpkin Pans. Only have one pan? Bake batter in two batches, washing and drying pan between batches.

#5 Cranberry Raisin Bread Pudding Stuffed Pumpkin

Ingredients
1 (2 1/2- to 3-pound) pumpkin* 2 tablespoons butter or margarine, melted and divided
2 tablespoons sugar, divided
2 large eggs
1/2 cup sugar
1/2 cup butter or margarine, melted
3/4 cup half-and-half
3/4 cup chopped pecans, toasted
1 (16-ounce) raisin bread loaf, cut into 1-inch cubes 1/2 cup fresh cranberries

Lemon-Vanilla Sauce Preparation
Cut off top of pumpkin, reserving lid with stem. Scoop out pumpkin seeds and pulp, and reserve for another use. Brush inside of pumpkin shell with 1 tablespoon melted butter. Sprinkle with 1 tablespoon sugar. Top with lid.

Bake at 350° for 35 minutes.
Brush inside of baked pumpkin shell with 1 tablespoon butter; sprinkle with 1 tablespoon sugar.
Stir together eggs and next 6 ingredients; spoon pudding mixture into a lightly greased 8-inch square pan.

Bake pumpkin and bread pudding at 350° for 25 minutes. Let pumpkin cool; spoon bread pudding evenly into pumpkin shell. Serve with Lemon-Vanilla Sauce.

Note: For individual servings, substitute 12 (1/2-pound) pumpkins. Scoop out seeds and pulp; sprinkle each pumpkin shell with 1 teaspoon butter and 1 teaspoon sugar, and bake with the bread pudding. (Do not prebake as with the larger pumpkin.) Spoon bread pudding evenly into baked pumpkin shells

#6 Pumpkin Gingerbread Trifle

Ingredients

2 packages (14-1/2 ounces each) gingerbread cake mix
1 package (4.6 ounces) cook-and-serve vanilla pudding mix
3 cups 2% milk
1 can (29 ounces) solid-pack pumpkin
1/2 cup packed brown sugar
1 carton (12 ounces) frozen whipped topping, thawed, divided

Directions
Prepare and bake gingerbread according to package directions, using two greased 9-in. round baking pans. Cool completely on wire racks.

Meanwhile, for pudding, in a large saucepan, combine pudding mix and milk; stir until smooth. Cook and stir over medium heat until mixture comes to a boil. Cook and stir 1-2 minutes longer or until thickened. Remove from the heat; cool to room temperature. Combine pumpkin and brown sugar; stir into pudding.
In a 4-qt. glass serving bowl, crumble one gingerbread cake; gently press down. Top with half of pudding mixture and whipped topping. Repeat layers. Cover and refrigerate overnight. Yield: 25 servings (1 cup each).

#7 Pecan Pie Bars

Crust:
2 cups all-purpose flour
1/3 cup white sugar
1/4 teaspoon salt
2/3 cup butter (10 2/3 Tablespoons)

Filling:
3 eggs
1 cup light corn syrup
1/2 cup white sugar
1/2 cup brown sugar
2 tablespoons butter, melted
1 teaspoon vanilla extract
1 2/3 cups chopped pecans

1.Preheat oven to 350 degrees. Line a 9X13 baking dish with heavy foil and spray with cooking spray.

2.In a large bowl, stir together the flour, 1/3 cup sugar, and salt. Cut in 2/3 cup butter until mixture resembles coarse crumbs. You can use a pastry blender or just two knives. Sprinkle the mixture evenly over the prepared pan, and press in firmly.

3.Bake for 20 minutes in the preheated oven.

4.While the crust is baking, prepare the filling. In a large bowl mix together the eggs, corn syrup, 1/2 cup white sugar, 1/2 cup brown sugar, 2 tablespoons margarine, and vanilla until smooth. Stir in the chopped pecans. Spread the filling evenly over the crust as soon as it comes out of the oven.

5.Bake for 25-30 minutes in the preheated oven, or until set. I usually like things on the rare side and a little gooey but these you want cooked all the way through so make sure the middle is set. If the top starts getting to browned cover with aluminum foil.

6.Allow to cool completely on a wire rack before slicing into bars with a sharp knife.

#8 Sweet Potato Crunch

Crust:

1 cup brown sugar
1/3 cup flour
1 cup chopped pecans
1/3 cup butter, melted

Combine brown sugar, flour, nuts and butter in mixing bowl. Set aside.

Sweet Potato Mixture
3 cups cooked and mashed sweet potatoes
1 cup sugar
½ teaspoon salt
1 teaspoon vanilla
2 eggs, well beaten
1/2 cup (1 stick) butter, melted

(splash of milk if needed)

Note: To cook sweet potatoes first wash and dry them carefully then you can either: 1) Bake them at 400 degrees for 50-60 minutes 2) Boil them for 30 minutes or 3) Pierce them with a fork and microwave them for about 15-20 minutes.

Preheat oven to 375 degrees. Spray a medium-size casserole dish with nonstick spray.

Combine sweet potatoes, sugar, salt, vanilla, eggs and butter in a large mixing bowl in the order listed. Beat thoroughly with a hand mixer for about 3-4 minutes to increase the fluffiness of the sweet potato mixture. Add a splash of milk if needed and mix.

Pour mixture into the baking dish. Bake for 25 minutes. At this point, dish can be covered and refrigerated for a couple of days.

Sprinkle the surface of the sweet potato mixture evenly with the crust mixture and return to oven for 10 minutes. Allow to set at least 30 minutes before serving.

The brown sugar and pecan crust should be slightly browned and crunchy. Makes 12 servings.

#9 Rasberry Swirl Cheesecake Cups

Yield: 32 cupcakes
Ingredients:
For the crust:
1½ cups graham cracker crumbs
4 tbsp. unsalted butter, melted
3 tbsp. sugar

For the topping:
6 oz. fresh raspberries
2 tbsp. sugar

For the filling:
2 lbs. cream cheese, at room temperature
1½ cups sugar
Pinch of salt
1 tsp. vanilla extract
4 large eggs, at room temperature

Directions:
Preheat the oven to 325˚ F. Line cupcake pans with paper liners. In a small bowl, combine the graham cracker crumbs, melted butter and sugar. Stir together with a fork until well blended and all the dry ingredients are moistened. Press 1 tablespoon of the mixture into the bottom of each cupcake liner. (I like to use a small drinking glass to easily and evenly press the crumbs down. One of Andrew’s sippy cups works wonderfully.) Bake until just set, 5 minutes. Transfer to a cooling rack.

#10 Red Wine Chocolate Cake

Ingredients
6 tablespoons (85 grams) unsalted butter, at room temperature
3/4 cup (179 grams) firmly packed dark brown sugar
1/4 cup (50 grams) white granulated sugar
1 large egg + 1 large egg yolk, at room temperature
3/4 cup (177 ml) red wine, any kind you like*
1 teaspoon (5 ml) vanilla extract
1 cup + 1 tablespoon (133 grams) all-purpose flour
1/2 cup (41 grams) Dutch cocoa powder
1/8 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon table salt
1/4 teaspoon ground cinnamon (this is a great place for that fancy Vietnamese stuff you stashed away)

Topping
1/2 cup mascarpone cheese
1/2 cup (118 grams) chilled heavy or whipping cream
2 tablespoons (25 grams) granulated sugar
1/4 teaspoon vanilla extract

Make the cake: Preheat the oven to 325°F. Line the bottom of a 9-inch round cake pan with parchment, and either butter and lightly flour the parchment and exposed sides of the pan, or spray the interior with a nonstick spray. In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth. Add the sugars and beat until fluffy, about 3 minutes. Add the egg and yolk and beat well, then the red wine and vanilla. Don’t worry if the batter looks a little uneven. Sift the flour, cocoa, baking soda, baking powder, cinnamon and salt together, right over your wet ingredients. Mix until 3/4 combined, then fold the rest together with a rubber spatula. Spread batter in prepared pan. Bake for 25 to 30 minutes, or until a cake tester inserted into the center comes out clean. The top of the cake should be shiny and smooth, like a puddle of chocolate. Cool in pan on a rack for about 10 minutes, then flip out of pan and cool the rest of the way on a cooling rack. This cake keeps well at room temperature or in the fridge. It looks pretty dusted with powdered sugar.

Make the topping: Whip mascarpone, cream, sugar and vanilla together until soft peaks form — don’t overwhip. Dollop generously on each slice of cake. It can also be covered and refrigerated for up to 4 hours.

Alcoholic Ice Cream!

Did you know that alcohol-flavored ice cream doesn't have alcohol in it? Apparently alcohol's freezing point is lower than water's, which means it would be almost impossible to get ice cream to retain that semi-solid form. However, my friend Joy sent over this link that shows you how to stabilize the alcohol using gelatin, and the super easy (but time consuming) recipe is HERE! Pumpkin Pie Waffles via Willams Sonoma

These may never replace pumpkin pie at a traditional Thanksgiving dinner, but they will give tradition a good race. Like pumpkin pie, they are comforting, custardy and filling. The waffles are made with the same spices used for pumpkin pie along with sour cream for smoothness; the dark rum is there for extra flavor and a little mystery.

Ingredients:
5 Tbs. unsalted butter
1 cup pumpkin puree (you can use canned puree)
1/2 cup firmly packed dark brown sugar
1/4 cup granulated sugar
1 1/4 tsp. ground cinnamon
1 1/4 tsp. grated peeled fresh ginger
1/8 tsp. ground cloves
1/8 tsp. freshly grated nutmeg
Pinch of salt
1 1/3 cups all-purpose flour
1 Tbs. double-acting baking powder
1/2 tsp. baking soda
1 cup milk
1/2 cup sour cream
2 eggs
2 Tbs. dark rum
1 tsp. vanilla extract
Vanilla ice cream and/or maple syrup for serving

Directions:
Preheat a waffle iron. If you want to hold the finished waffles until serving time, preheat an oven to 200°F.

Melt the butter; set aside.

In a large bowl, combine the pumpkin, brown and granulated sugars, cinnamon, ginger, cloves, nutmeg and salt. Using a rubber spatula or handheld electric mixer, mix together well. Stir in the flour, baking powder and baking soda. The mixture will be thick and a little lumpy. Dont try to smooth it out; just mix until the ingredients are incorporated.

In another bowl, beat together the milk, sour cream, eggs, rum and vanilla. Add the liquid ingredients to the pumpkin mixture and stir until combined. Fold in the melted butter.

Whether or not your irons grids are well seasoned or made of a nonstick material, it is best to lightly butter or spray the grids for these waffles because the batter is quite sticky. Brush or spray the grids again only if subsequent waffles stick.

For a Belgian waffle iron, spoon out 2/3 to 3/4 cup of batter (or the amount recommended by the manufacturers instructions) onto the hot iron. Use a metal spatula or wooden spoon to spread the batter evenly over the grids. Close the lid and bake until golden. If the waffle is hard to remove from the iron, peel it off gently and carefully. Serve immediately or keep the waffles, in a single layer, on a rack in the preheated oven while you make the rest.

Serving: Serve these warm and golden, one to a diner, topped with vanilla ice cream and/or maple syrup. They are great with a cup of hot or cold cider. Makes about six 4 1/2-inch square Belgian waffles.

Casseroles!

I found this great blog by Tricia Cohn called 30 days of...blog, and in it she has an entire section of casseroles she's either made or suggests! A casserole, French for "saucepan", is a large, deep dish used both in the oven and as a serving vessel. In the UK, this type of dish is frequently also called a bake. They usually consist of pieces of meat, various chopped vegetables, a starchy binder such as flour, potato or pasta, and, often, a crunchy topping. My domestication in the kitchen has really been slacking, so I'm going full speed ahead with casseroles from her site! I'm trying the Chicken Divan on Tricia's blog tonight! Looks DELISH! INGREDIENTS

3lbs. boneless skinless chicken breast
2 cans of cream of chicken soup
1 can of cream of mushroom soup
1 cup mushrooms
1 broccoli head
1/2 cup of curry OR Essence of Emeril
5 cloves of garlic (frozen) Trader Joes
4 slices of your favorite bread.
1/2 cup of salted butter
Garlic salt

HOW TO MAKE
Boil 3lbs of boneless skinless chicken breast in 1/2 cup chicken broth and top with water.
Steam 1 head of broccoli until al dente.

In a bowl combine the cans of soup, 1 can of milk, 4 cloves of crushed garlic, 1/2 cup dehydrated onions. Add the diced chicken and broccoli to the mixture. (Add 1 cup of sliced mushrooms (optional) Pour all ingredients into the casserole dish. Add the spice.

Top with 2 cups of shredded cheddar cheese.
For the bread topping: melt 1/2 cup of salted butter and 1 clove of garlic. Add diced bread and coat evenly. (I used old hot dogs buns for this recipe but sourdough works well) Evenly spread the bread atop the casserole.

Bake covered at 350˚ for 40 minutes. Remove foil and cook for 10 more minutes at 375˚.

Halloween Crepes!

My favorite kid and I made Halloween Crepes this weekend to celebrate this awesome holiday! They were delish! All we did was add orange gel food coloring to our usual crepe batter (HERE), and cut out Jack-O-Lantern faces, smeared with butter & Nutella and sprinkled with brown sugar! Yummm! Berry Chantilly Cake

Have you ever had the Berry Chantilly Cake at Whole Foods? If you haven't, then you need to go out and try it right now! It's so light, fresh and delectable! I first had it last month when a co-worker Stacy brought it to a going away party, and today another co-worker Lori made an exact replica! I, of course, devoured it. From online research it looks like this is Whole Foods "signature" cake, and for good reason! It's now my "signature" cake for my future birthdays and personal milestones! Thankfully Lori shared the recipe with us below! Yum! Happy Tuesday! xoxo, Julie

Here is the recipe Lori used and it is spot on! She said that she did not make the cake from scratch but used box cake mix. It was delish!

Berry Chantilly Cake

This recipe is a close copy of a Berry Chantilly Cake from a popular organic grocery chain. The ingredients were copied from the listing on the cake container itself. The original cake calls for orange Flavedo which is simply orange zest. This recipe substitutes Gran Marnier instead but feel free to use the zest instead if you like. The overall measurements were calculated based off of other tried and tested recipes. The apricot glaze is an easier method than making your own from scratch but will yield the same results. If you try it and feel it’s not exactly right let me know. I no longer have the original to compare it to. None of the markets here in my new city sell this cake. Hope you enjoy!

Ingredients

Yellow Cake:
1 cup butter
1 1/2 cups white sugar
8 egg yolks
3/4 cup milk
1 1/2 teaspoons vanilla extract
1 cup + 2 Tablespoons unbleached cake flour
1 cup unbleached unbromated flour
2 teaspoons baking powder
1/2 teaspoon salt

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 – 8 inch round pans. Sift together the flour, baking powder and salt three times to ensure maximum integration. Set aside.
2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolks one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Pour batter into prepared pans.

Bake in the preheated oven for 25 to 30 minutes, or until tops spring back when lightly tapped. Cool 15 minutes before turning out onto cooling racks.

(Make sure to use unbleached, unbromated flour to ensure your cake comes out like the original! Measure all flour portions by pouring your flour into your measuring cup rather than scooping. Scooping will pack the flour in and almost always add too much to the batter causing the cake to be dry or not rise.)

Mascarpone cream cheese frosting:
2 cups of heavy cream 
8 ounces of mascarpone cheese, room temperature 
8 ounces cream cheese, room temperature
1 cup confectioners’ sugar, sifted 
1 teaspoon almond bitter essence

Directions
1. With an electric mixer on medium speed, whisk heavy cream and almond bitter essence until stiff peaks form (be careful not to over-beat, or cream will be grainy).
2. In another bowl, whisk together mascarpone and confectioners’ sugar until very smooth.
3.Gently fold whipped cream into mascarpone until completely incorporated. Use immediately.

Raspberry Puree:
Ingredients

2 pints raspberries
1/4 cup sugar
1 tablespoon lemon juice

Directions
1. Combine raspberries and sugar in a saucepan. Cook until raspberries are broken down, about 10 minutes.
2. Remove from the heat and strain through a chinois to eliminate seeds.

Berries:
Ingredients

1 cup Fresh strawberries, stemmed, halved 
1 cup Fresh raspberries 
1/2 cup Fresh blackberries or blueberries 
3 oz. Grand Marnier (you can also use orange extract)
1/4 cup Orange juice

Directions
1. Combine Grand Marnier & orange juice. Whisk until blended.
2. Place berries in a shallow bowl or dish, cover with Grand Marnier mixture.
Marinate for 30 minutes.

Apricot Glaze:
Ingredients

1/2 cup (125 grams) apricot jam or preserves
1 tablespoon Grand Marnier or water (can also use other liqueurs)

Directions
1. Heat the apricot jam or preserves in a small saucepan over medium heat until melted.
2. Remove from heat and strain the jam through a fine strainer to remove any fruit lumps. (If using, add the liqueur at this point.)
3. Let cool until it is only slightly warm and then glaze the fruit on top of cake, using a pastry brush.

Assembly:
Place one completely cool layer of cake on a cake dish and add frosting to top. Frosting should be slightly higher near edges than in the center. Add raspberry puree to layer then add a layer of fruit. Next, add the second layer of cake and frost the entire cake with Marscopone frosting. At this point you can add piping to the top rim of the cake as well as the sides if you like. Piping at the top will help to keep the raspberry puree from running down the sides. At this point add the raspberry puree then top with the remaining fruit. While the apricot glaze is still warm brush the fruit with a thin layer. You may also add sliced almonds to the top and sides of the cake if you wish. Place the cake in the refrigerator until ready to serve. This cake is best served cold.

Paper Lanterns

I'm a big fan of hanging paper lanterns at casual events. There are several different options in hanging and lighting them, and a good, basic article can be found HERE. I've found them without lighting attachments at World Market, as well as at some party stores and online. Basically, you can get very simple with them by hanging them with fishing line without lighting, attaching them to Christmas lights or battery-operated LED lighting, or going more technical and hanging them with lighting cords. Louisiana Jamabalaya Engagement Party

My boyfriend and I, along with friends and family, had the cutest engagement party last weekend to celebrate our friends Beth & Keith! The theme was "Louisiana" with jambalaya, white beans, salad and rolls catered from Tee Wayne, the 2011 World Jambalaya Champion! Desserts and dips were brought by the hosts. The food was outstanding! I highly recommend Tee Wayne! College SEC football was on the living room T.V. as well as the backyard T.V. We decorated with burlap, twine, hurricane candles, and wild flowers. We also had childhood pictures of the bride and groom adorning the mantle which I didn't get a picture of..booo! Bananas Foster

This week conversations have been popping up left and right about Bananas Foster! I had some recently at an event in New Orleans and I can't stop dreaming about it! It's a New Orleans dessert created in 1951 at Brennan's Restaurant, made from bananas and vanilla ice cream, with the sauce made from butter, brown sugar, cinnamon, dark rum, and banana liqueur. The butter, sugar and bananas are cooked, and then the alcohol is added and ignited. The bananas and sauce are then served over the ice cream. Preparation of the dish is often made into a table side performance as a flambe'. mmmmm Happy Thursday! xoxo, Julie

ORIGINAL BANANAS FOSTER f/ Brennan's website

•¼ cup (½ stick) butter

•1 cup brown sugar

•½ teaspoon cinnamon

•¼ cup banana liqueur

•4 bananas, cut in half lengthwise, then halved

•¼ cup dark rum

•4 scoops vanilla ice cream

Combine the butter, sugar, and cinnamon in a flambé pan or skillet. Place the pan over low heat either on an alcohol burner or on top of the stove, and cook, stirring, until the sugar dissolves. Stir in the banana liqueur, then place the bananas in the pan. When the banana sections soften and begin to brown, carefully add the rum. Continue to cook the sauce until the rum is hot, then tip the pan slightly to ignite the rum. When the flames subside, lift the bananas out of the pan and place four pieces over each portion of ice cream. Generously spoon warm sauce over the top of the ice cream and serve immediately.

Mini Christmas Trees for Kids

Throughout the past year, I've been giving my two favorite people glass blown ornaments to mark special occasions! Houmas House Plantation has the most amazing selection, and I can't help but get at least two every time I walk in! Ballet slippers for a dance recital, a Hawaiian Luau girl for a birthday party, the list goes on and on. Another special milestone is coming up, and I'm on the hunt for the perfect ornament! As an extra special present for this occasion, I'm getting us a mini pink Christmas tree so my favorite kid can put her ornaments on it, so all of her wonderful accomplishments can stand out from the main tree! Candy Corn Cheesecake Mousse

Candy Corn Cheesecake Mousse

This recipe yields a sweet and fluffy, light cream cheese flavored dessert.

1 package (8 oz.) cream cheese

1/2 cup powdered sugar

1/4 cup milk or cream

1 teaspoon vanilla

1 small container (8 oz.) Cool Whip, thawed

orange and yellow food color

candy corn (for garnish)

Beat cream cheese in the bowl of an electric mixer until fully smooth. Slowly add powdered sugar, then milk (or cream). Add vanilla. Continue mixing. Beat about 1 minute on medium to medium-high speed. Fold cool whip into cream cheese mixture, and stir until fully combined.

Scoop about 1/3 of the Cheesecake Mousse into a bowl, and color orange. Color another third of the mixture yellow. Leave the remaining third white. One color at a time (starting with yellow), scoop mixture into a piping bag or large ziplock bag, and squeeze a layer of the Cheesecake Mousse into small dessert dishes of your choice. Repeat with orange and then white Mousse.

Refrigerate 30 minutes (or up to 1 day) before serving. Garnish with candy corn if desired.

Recipe yields 4 moderate servings or 6-8 mini servings.

Recipe options: This general concept could be created using vanilla pudding or white chocolate mousse (from a mix or from scratch).

Today is Rosh Hashanah, the Jewish New Year! I like this Jewish Holiday because it's a commemoration of the Big Bang which fashioned the universe and our planet. Spiced Apple Cider Cocktails

1 gallon fresh apple cider-10 cinnamon sticks-5 anise pods-3 teaspoons whole cloves-1 cup extra dark rum (optional) -Orange slices for garnish

Pour the cider into a large pot and simmer with the spices for 10-15 minutes. If you want, tie the spices up in cheesecloth for easy removal later - or just let people deal with cloves in their drinks. Add the rum at the end. Garnish with a slice of orange.

Hawaiian Luau Party!

I had the honor of helping plan and decorate my favorite kid's birthday luau this past weekend! The main attraction was the huge blow-up slide rented for four hours from Baton Rouge's Lindsey's Entertainment. They were super easy for us to secure, timely and professional! We made a birthday wreath with just a Styrofoam ring, wrapped with a pink feather boa and secured with Hawaiian Parasols! You can get 50 parasols from Hobby Lobby for $5 in the party section! I stuck the initials on at the last min with more parasols. No glue required!

It really depends on the wedding, there is no right answer, however most do it following the toasts, invocation, and meal, but before the first dance of the evening!

Which layer should they cut?

The caterer and/or photographer should make that decision. Definitley not the top layer!

Some couples buy them to save, some borrow from the caterer.

After the bride & groom cut the cake, what next?

After the bride and groom have completed their cake cutting ceremony, the couple has the option of serving to their new in-laws. The rest of the cake is cut by the catering staff or friend designated in advance and served to all of the wedding guests.

Two Traditions

#1) Have the top layer of the cake made out of fruit cake or cheesecake. This layer is saved and frozen for the bride and groom to eat on their first anniversary. (Wrap this very carefully-and designate someone to be in charge of getting this layer to you.)

#2) A piece of the bride's cake under a single person's pillow will lead to "dreams of a future spouse", according to tradition. Have the caterer pack slices in decorative boxes to send home with guests.

Cornhole/Bagtoss is a lawn game in which players take turns throwing cornhole bags (cotton duck bags filled with feed corn) at a raised platform with a hole in the far end. These platforms are usually made with plywood or plastic and are often decorated. A corn bag in the hole scores 3 points, while one on the platform scores 1 point. Play continues until a player reaches the score of 21.

A Petit Four is a small confection, most commonly small cakes, generally eaten at the end of a meal (e.g., with coffee) or served as part of dessert. The name is from the French petit four, meaning "small oven". These tiny, beautifully iced cakes are traditionally made with an almond sponge cake, but they can be any flavor of cake and/or filling. They are so cute for showers and baby's birthday parties! For example, I'm playing a Cigarette Girl at an Old Hollywood fundraiser this week for Forum 35 at Celtic Studios! Cigarette girls were women who sold individual packs of cigarettes in clubs and restaurants in the 1920s through the 1950s on wide trays. With a few volunteers, it's so easy to incorporate something like this into a party! In addition we will have a red carpet, lighting, vintage cars, black and white photos, a photo booth, etc. The chair of this event, Melissa, even put a red wax seal on the invites! Put a Message on a Restaurant Plate

My favorite kid is having a big birthday this week, so we had some Ruths Chris Friday night to celebrate! And guess what...the restaurant did the cutest thing... They sent out a surprise dessert at the end of our meal with her name and a special message written on the plate! FUN! I thought this was cute, and would be worth secretly bringing your own plate with a sharpie or wax pencil and giving to the waiter at another restaurant that didn't normally do this! Oh, we got two desserts thanks to the owner T.J. who was sitting at the table next to us! Ruths Chris rocks! Hope y'all had a great weekend! Happy Monday! xoxo, Julie

Hookah Lounge

My Chicago friend Susan just attended a wedding with a hookah lounge! So! Incredibly! Awesome! Her friend, the groom, is Persian and had a little area outside set up on the ground with blankets, benches, pillows and two hookahs. Also included around the reception were some Middle Eastern treats like dates and baklava. She said there were constantly people out there during the wedding and it was such a nice touch for the groom! See pic below. So cool! I love it when kids are invited to weddings! However, planners often forget that kid's are picky eaters! Local catering company The Edible Event recently catered a wedding and had a special kids menu prepared! I love it! So simple, yet so thoughtful!

They had:

Pigs in the blanket, Mini Cheeseburgers with Ketchup & Thin French Fries

Happy Weiner Schnitzel Day!

Did you know that a Weiner Schintzel isn't a hot dog, but an Austrian meal consisting of a thin cutlet of veal coated in flour, egg, and breading, which is then sautéed in oil and butter until crispy? In German "schnitzel" means a boneless veal cutlet. Add bread crumbs and fry it, and you have Wiener Schnitzel! It's how we got the American Chicken Fried Steak (WS recipe brought over by the Germans & Austrians and tweeked a little)! Now this is something to celebrate! Have a wonderful weekend! Ole Miss football tailgating...an event planners dream! Everyone must experience this at least once! Everything looks perfect. Everything is laid out beautifully. Everything is organized! From the tents, linens, and silver trays to the chandeliers, centerpieces, and candelabras! It's awesome! The men, women and children dress like they are going to a respectable party which makes it that much more wonderful.
